Ingredientes

  • 1 Tbsp. Butter
  • 1/2 x Onion diced
  • 1 x Cooked chicken - shredded
  • 1 x 16 ounce. can enchilada sauce
  • 1 c. Shredded jack cheese
  • 8 x Flour tortillas
  • 1/2 c. Scallions - minced Lowfat sour cream, olives, cilantro for garish

Direcciones

  1. Directions:In a large pan, heat the butter and add in the shredded chicken and onion. Saute/fry briefly. To assemble, dip the flour tortillas in the enchilada sauce. Place 2 Tablespoons of the chicken mix in the middle of the tortilla. Sprinkle with 2 Tablespoons shredded jack cheese and a healthy pinch of scallions. Roll each tortilla into a cigar shape and place in a storage container to freeze. Pour the remaining enchilada sauce over the finished tortillas, sprinkle with remaining cheese. To bake, bring enchiladas to room temperature and bake at 350 degrees for 45 min to 1 hour. Garnish.
