Receta Crock Pot Hot Dog, Baked Beans, and Cornbread Casserole
I was searching for a recipe that would utilize baked beans and hot dogs, could be made in a slow cooker, be inexpensive and easy, but be more than just beanie wienies when I found several versions of this recipe. Most of the recipes called for the corn bread topper to be made from scratch, but I decided to use boxed corn muffin mix to simplify it even further. I needed the recipe to be as simple as possible for a cooking demonstration at the food pantry I help run. Plus, I needed to keep the overall cost as low as possible. The corn bread muffin mix was approximately 50 cents a box while the cost of buying corm meal, flour, baking powder, etc. could be several dollars.
This casserole is easy to make in a crock pot (slow cooker), but it can be cooked in a 350 degree F oven instead. The crock pot is great if you have a few hours until dinner, but it works great in the oven if your pressed for time.
Recipe: Crock Pot Corn Bread and Baked Bean Casserole
Ingredients:
- 1 28 oz. can baked beans
- 2 – 4 hot dogs, sliced into bite-sized pieces
- 1 (6 – 8 oz.) package corn muffin mix (you can make it according to instructions and not use the rest of the ingredients below)
- 1 egg
- 1 can cream-style corn
- 1/2 c. shredded cheddar cheese (optional)
Instructions:
Mix the baked beans and hot dogs together in the crock pot.
In a bowl, mix corn, corn muffin mix, egg, and butter.
Spread mixture around the outside of the cooker on top of the baked beans and hot dogs. The mixture will spread toward the middle as it cooks.
Cook in covered crock pot on low until corn bread has set/baked, usually 2 to 2 1/2 hours.
