Crockpot Cauliflower Soup
INGREDIENTS:
- 1 large head cauliflower, broken into florets
- 2 celery ribs, cut small
- 2 carrots, cut small
- 1 red pepper, cut small
- 1 medium red onion, cut small
- 4 cups chicken broth
- 1 teaspoon Worcestershire sauce
- pepper, to taste
- 2 cups shredded cheddar cheese
- 2 cups half and half
DIRECTIONS:
Place the cauliflower in a crockpot. Add the celery, carrots, pepper and onion. Stir in the broth, Worcestershire sauce and pepper. Cover and cook on low for 5-6 hours or until the vegetables are tender.
In a blender or food processor, process soup in batches until smooth. Return to crockpot; stir in the cheese and cream. Cover and cook on high for 30 minutes or until cheese is melted.
