Crockpot white bean soup

Ingredientes

  • 1 lb cannellini beans
  • 1 - 1 1/2 c. Diced carrots
  • 3 lg. Ribs celery diced
  • 1 sm. Onion cubed
  • Up to a cup of diced ham
  • One sm. Package of diced fatback
  • 1 carton chicken broth
  • 1 tbsp. Italian seasoning
  • 1 1/2 tbsp. Minced garlic
  • 1/2 tbsp. Pepper
  • 1/2 tbsp. Powdered onion
  • 1 - 2 cubes chicken bullion
  • Water if necessary

Direcciones

  1. Clean and soak beans overnight, then drain.
  2. Boil beans in clean water for 10 mins, dip out forming scum.
  3. Drain beans.
  4. Fry fatback til pieces are browned.
  5. Add all ingredients to crockpot including any rendered fat from the fatback. Cover and cook on high for 4 - 5 hours (add hot water to pot to keep beans covered if necessary) until beans are soft.
