Ingredientes

  • 2 c. hot water
  • 2 c. flour unbleached
  • 1 Tbsp. active dry yeast
  • 1 tsp salt

  1. Mixing & Rising: Pour water in a bowl. Blend in 1 c. of the flour and the yeast. Allow to sit for 10 - 15 min, then add in the rest of the flour and the salt.
  2. Mix thoroughly and cover with a damp towel or possibly plastic wrap. Let rise for 1 - 2 hrs.
  3. After the dough has doubled, stir down and let rise 5 min. Meanwhile, preheat the griddle.
  4. Lightly grease the griddle and heat medium-low. Place as many greased rings on the griddle as will fit comfortably. Fill each with approximately 1/4 c. of the batter. The batter should be thin sufficient for holes to develop. Cook for 6 - 7 min till the crumpets begin to dry on top and brown on the bottom. Remove the rings; flip the crumpets to cook on the other side for 1 - 2 min.
  5. Serve toasted with butter and jam.
  6. Note: Standard size tuna fish cans are a good size to use for a crumpet ring. Remove label and scrub out well. Grease well before use. Can be reused.
