Crunchy peanut candy

Chinese eat a lot of peanuts. We eat peanuts when we have parties, games, watching TV, family time, picnics and even given as gifts. My parents say they are very nutritious. They are a must during Chinese New Year. Crunchy Peanut Candy is another favourite. We love the crunch, the flavour and the sweetness. I made this and the Crunchy Sesame Candy Bars for Chinese New Year which falls on 14th Feb this year together with Valentine’s Day. So, it’s a double celebration.

Making this peanut candy is not too difficult but I think I’m not 100% there yet. I guess my mistake was using the ready fried peanuts instead of the dry roasted ones. This caused the peanuts not to stick to the melted sugar that well. So, use the dry roasted peanuts if you are making this. However, the crunch and taste is still there. I find it very addictive.

Leave to cool

Spread the peanuts on to a grease paper-lined tin. Put the sugars, golden syrup and water in a pot to cook under low to medium fire until it turns caramel. It is only ready when a little amount dropped into cold water turns brittle. This takes about 20 minutes of cooking. Add the butter. Stir until it melts. Then add in the baking soda and give a quick stir. It will bubble up. Quickly pour it over the peanuts and let it set before breaking them into pieces.
