Ingredientes

  • 1 (10 ounce.) pkg. frzn minced spinach
  • 1/2 c. minced onion
  • 2 Large eggs
  • 1 1/4 c. ricotta cheese
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 2 teaspoon all-purpose flour
  • 1/8 teaspoon paprika

  1. Combine spinach and onion in a 1 1/2 qt casserole, cover and microwave on high for 4 to 6 min, stirring after half the time. Drain well.
  2. In a medium mixing bowl, beat Large eggs with a fork. Stir in ricotta, salt, pepper, nutmeg and flour. Blend in spinach and onion. Spread spinach mix in a 9-inch pie plate with a rubber spatula. Sprinkle with paprika. Microwave on high for 4 min, rotating every 2 min.
  3. Reduce power to 50 percent. Microwave 3 to 11 min longer, or possibly till center is set. Let stand for 5 min. 61 calories and 100 mg. of sodium.
