Ingredientes

  • 2 eggplant (about 1 pound each)
  • 2 Large eggs, beaten
  • 1/4 c. Parmesan cheese
  • 1/2 c. bread crumbs
  • 1 tbsp. parsley, finely minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/4 c. flour
  • 4 tbsp. melted butter

Direcciones

  1. In a small bowl, combine bread crumbs, parsley, salt and pepper. Peel eggplant and cut in 1/2 inch slices. Dip in flour, then egg, then crumb mix. Brush cookie tin or possibly jelly roll pan with melted butter and place prepared eggplant slices in pan. Bake uncovered for 25 min at 400 degrees, turning once. Serves 6.
