Crusty Fried Salmon Planks

Growing up, my mom would often create recipes from different types of canned fish for breakfast. She was a master at preparing the meal complete with homemade biscuits( if we didn't have bread for toast), prepping our school clothes, ironing our dad's, and managing to get herself ready and out the door by 6:30 am. Aside from being rich in omega three's and delicious, it was also a great way to stretch a buck. I adapted this recipe from the one mom makes, but ever so slightly, to stay true to the original taste and feel of the mom's. Both are equally delicious, but mom's carries the nostalgia of being a childhood through adulthood favorite for me. Served with eggs, toast and jam, this vintage recipe is something to write home about. Besides, everyone know's we cannot fully harness the power of our mother's cooking!!

Ingredientes

  • 1 1 lb. can pink salmon, broken into planks, bones discarded
  • 1/3 c. seasoned flour
  • 1 tsp. mustard powder
  • 1/3 c. pancake mix
  • pinch of cayenne pepper
  • Olive oil for frying
  • kosher salt and fresh cracked pepper to taste

Direcciones

  1. Preheat cast iron skillet to medium high heat.
  2. Meanwhile, mix together dry ingredients and carefully roll planks in flour mixture. Add about 2 tbsp. olive oil to pan and swirl in pan to coat bottom. Cook until golden brown and flip- about 3 minutes per side. Drain on paper towels. Season with kosher salt and pepper to taste.
