Ingredientes

  • 1/2 c. diced, peeled avocado
  • 2 Tbsp. balsamic vinegar
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp grnd cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 c. cooked rice
  • 1 c. minced, seeded plum tomato (about 3)
  • 1/4 c. chopped fresh parsley
  • 1 x (15 ounce) can black beans, rinsed and liquid removed
  • 2 Tbsp. chopped fresh cilantro (optional)

Direcciones

  1. Combine first 6 ingredients in a bowl and toss gently. Add in rice, tomato, parsley, beans, and cilantro, if you like; toss well. Serve chilled or possibly at room temp.
