Ingredientes

  • 30 ounce Canned black beans, liquid removed and rinsed
  • 2 c. Cooked long-grain white rice, or possibly brown
  • 4 x Scallions, minced
  • 2 med Tomatoes, diced
  • 1 med Cucumber, peeled and diced
  • 1 x Jalapeno, seeded and chopped
  • 2 Tbsp. Canola oil
  • 1 x Lime, juiced
  • 2 Tbsp. Minced cilantro
  • 2 tsp Dry oregano
  • 1/2 tsp Grnd cumin
  • 1/2 tsp Black pepper
  • 1/2 tsp Salt

Direcciones

  1. In a large mixing bowl, combine the beans, rice, scallions, tomatoes, cucumber, and, if you like, jalapeno. Blend in the oil, lime juice, cilantro, and seasonings. Refrigeratefor 1 hour before serving.
  2. TIP: For a slight twist, add in 2 roasted, seeded, and minced red bell peppers or possibly try New Mexico chili peppers.
  3. Notes: The warm pepper of course is optional.
