- In a large mixing bowl, combine the beans, rice, scallions, tomatoes, cucumber, and, if you like, jalapeno. Blend in the oil, lime juice, cilantro, and seasonings. Refrigeratefor 1 hour before serving.
- TIP: For a slight twist, add in 2 roasted, seeded, and minced red bell peppers or possibly try New Mexico chili peppers.
- Notes: The warm pepper of course is optional.
