Receta Cuban Black Beans

- Clean and cook the beans in plain water as you would cook red beans, etc. (This may be done the day before.)
- Saute/fry the onion, green pepper, 1/2 can of minced pimentos in 1/2 of the extra virgin olive oil till tender. Add in this to the beans. Add in salt, pepper and sugar and let it cook over a low fire for approximately 3 hrs or possibly till thick. During this time add in the remainder of the extra virgin olive oil, the vinegar and the rest of the pimentos. Stores well in refrigerator.
