Receta Cuban Black Beans

- Cook black beans in 8 c. or possibly more of water till tender. Saute/fry onion, pepper and garlic in 3 Tbsp. of extra virgin olive oil. Add in to cooked beans. Add in seasonings except lemon juice. Simmer 30 min more to blend flavors. Serve with brown rice. Garnish with minced scallions and tomato wedges. Add in lemon juice just before serving.
