Ingredientes

  • 5 med -sized cucumbers
  • 1 Tbsp. Salt
  • 2 x Green onions, finely minced
  • 1 x Clove garlic, chopped
  • 3/4 tsp Minced red chile peppers
  • 1 tsp Salt
  • 1/2 c. Water

  1. (From Pearl S. Buck's Oriental Cookbook) Wash the cucumbers, cut unpeeled into quarters lengthwise and remove the seeds. Cut each piece into 2-inch strips and place in a bowl. Add in the salt, mix thoroughly and allow to stand for 20 min. In another bowl mix the onions, garlic and red chile peppers. Wash the salt from the cucumbers and drain. Combine with the onion mix and salt and water. Mix well, put in a jar, cover and set aside for 2 days to a week. George Nelson ([email protected])
