I am a sucker for one-pot meals. They are usually quick and easy recipes that taste great. This is a complete dish and is the star of the dinner show. Yes, you can serve it with some meat or a nice green salad too. The plus? It is a Vegan Recipe and delicious!

Delicious Rating: For a spicier meal, add more curry paste or powder. The first time around I used brown rice and since brown rice cooks a lot longer, the meal was too mushy. The second time around I used white rice and it turned out great. There is a great balance between hot from the curry, sweet from the raisins, and the perfect crunch from the pecans. Overall, it is a good meal and I plan on cooking it again!

Curried Bean Pilaf

Recipe type: Dinner

Heat olive oil over medium heat in a medium pan.

Add in onion, cover and cook for 5 minutes.

Stir in green onions and cook for an additional minute.

Stir in curry paste and rice and combine all well.

Add in vegetable stock, cover and cook for 45 minutes or until rice is tender.

Gently stir in beans, peas, raisins and pecans and heat through.

Salt and pepper to taste.

Serve hot.

If you want more heat add more curry. Really play with it according to what you like.

Looks like an odd combination but don’t fret, it is good!
