Ingredientes

  • 3 1/2 lb Chicken, cut into serving pcs
  • 1 Tbsp. Oil
  • 2 Tbsp. Curry pwdr
  • 1 x Onion, finely minced
  • 2 x Carrots, sliced
  • 1/4 c. Dry apricots, minced into small pcs
  • 1/4 c. Tomato puree
  • 1 c. Chicken broth
  • 2 Tbsp. Butter, softened
  • 3 Tbsp. Flour
  • 1 c. Peas, cooked
  • 1/3 c. Shredded unsweetened coconut Major Grey's chutney

Direcciones

  1. Soak the clay pot in cool water for 10 min. Place the chicken in the pot and add in the oil, curry pwdr, onion, carrots, apricots, tomato puree and chicken broth. Cover and place in a cool oven.
  2. Adjust the heat to 450F and cook for 1 hour. Combine the butter and flour and stir into the juices. Add in the peas. Sprinkle the chicken with coconut.
  3. Cover and continue cooking for 15 min. Serve with rice and chutney.
