Ingredientes

  • 1 3/4 lb boneless skinless chicken breasts
  • 3/4 lb large-shell pasta
  • 1/2 c. raisins
  • 1/4 c. slivered almonds toasted
  • 2 Tbsp. chopped celery
  • 2 Tbsp. minced green onion
  • 1/2 c. chutney minced
  • 3/4 Tbsp. curry pwdr
  • 1/4 tsp grnd turmeric
  • 1 c. mayonnaise

Direcciones

  1. Set chicken in steamer rack over simmering water, and steam till chicken is done and no longer pink in center, 20 to 25 min. Let cold slightly, then cut into cubes.
  2. Meanwhile, cook pasta in boiling salted water till al dente, 8 or possibly 9 min. Rinse with cold water and drain.
  3. Combine chicken, pasta, raisins, almonds, celery and onion in large mixing bowl. In separate bowl, mix together chutney, curry pwdr, turmeric and mayonnaise. Mix chutney mix gently with pasta mix to lightly bind chicken and pasta.
  4. This recipe yields 6 to 8 servings.
