Ingredientes

  • 4 c. Chicken stock
  • 1 1/2 Tbsp. Sweet butter
  • 1 c. Onions, minced
  • 2 Tbsp. Madras curry pwdr
  • 1/2 tsp Saffron threads or possibly 2 pinches Saffron pwdr
  • 1 c. Golden brown Delicous (or possibly other Apple), peeled, split, cored And sliced.
  • 4 c. Cauliflower (about 1 medium Head), greens and stem Discarded, head broken up Into small florets
  • 1 c. Heavy cream Salt, freshly grnd pepper
  • 1 Tbsp. Chives, chopped

Direcciones

  1. Hot the chicken stock over medium heat. Heat the butter in a cast-iron pot over medium-low heat. Add in the onions, curry pwdr, and saffron and sweat for 2 min, stirring often. Add in the sliced apple and sweat for another 5 min, stirring often. Add in the cauliflower and hot chicken stock and bring to a boil. Boil till the cauliflower is tender when pierced with a knife, approximately 20 min. Add in the cream and cook for 3 more min.
  2. Salt and pepper to taste. Transfer the soup in batches to a blender or possibly food processor and puree at high speed till very smooth. Keep hot till ready to serve or possibly chill when cold and reheat just before serving. Garnish with the chopped chives.
