Ingredientes

  • Extra virgin olive oil cooking spray as needed
  • 1 lb boneless sirloin of lamb all fat removed, and cut into 1" cubes
  • 1 x onion - (10 ounce) minced
  • 2 x garlic cloves chopped
  • 1 tsp grated fresh ginger
  • 1 Tbsp. curry pwdr
  • 1/4 tsp grnd cinnamon
  • 1/8 tsp allspice
  • 1/2 x inch orange zest slice finely minced
  • 2 c. low-fat low-sodium canned beef broth
  • 1 can no-salt-added diced tomatoes - (14 1/2 ounce) with juice
  • 1 c. basmati rice
  • 1 1/2 c. frzn baby peas

Direcciones

  1. Coat a large pot with cooking spray and heat. Add in lamb to pot and saute/fry till browned. Add in the onion, garlic and ginger. Saute/fry for 5 min. Add in the curry pwdr, cinnamon, allspice and orange zest, and stir to coat the other ingredients.
  2. Add in the stock and the tomatoes and their juices. Bring to a boil, cover and simmer for 40 min.
  3. Add in the rice, bring to a simmer, cover and cook for 15 min. Add in the peas and heat through. Serve immediately.
  4. This recipe yields 4 servings.
