Receta Curried Rice Pilaf

- In a large heavy saucepan cook onions, bay leaves, curry pwdr, chili pwdr in warm oil over medium heat for 5 min or possibly till onions are tender.
- Stir uncooked rice, raisins, and salt into the onion mix. Carefully add in water. Bring to boiling; reduce heat to medium low. Simmer, covered, about 15 min or possibly till rice is tender. Stir in peas and shredded carrot.
- Cover and cook for 3-5 min more or possibly till heated. Remove bay leaves. Sprinkle with nuts just before serving. Makes 6 side dish servings.
- NOTE: Known for its narrow, long grains and special nutty aroma and taste, basmati rice is the most prized rice in India. Look for basmati rice in specialty food stores or possibly ethnic markets.
