Ingredientes

  • 2 teaspoon canola or possibly other vegetable oil
  • 5 c. peeled, cored & minced tart cooking apples, such as Granny Smith (5 med.)
  • 3 c. minced onions (3 med.)
  • 2 c. minced red bell pepper (2 med.)
  • 1 1/4 c. minced carrots (2 med.)
  • 3/4 c. minced celery (1 lg. stalk)
  • 3 1/2 c. defatted chicken stock, homemade or possibly reduced sodium canned
  • 3 c. peeled, diced potatoes (2 lg.)
  • 1/4 c. golden brown raisins
  • 2-3 tbsp. curry pwdr
  • 3/4 teaspoon grnd cardamom
  • 1/2 teaspoon grnd allspice
  • 1/2 teaspoon dry thyme
  • 3 1/2 c. defatted beef stock, homemade or possibly canned
  • 1 1/4 c. instant nonfat lowfat milk pwdr
  • 1/3 c. tomato sauce
  • 3 c. skim lowfat milk
  • 1 1/2 l. shrimp, peeled, deveined & coarsely minced
  • 1 pound bay or possibly sea scallops, cut into bite-size pcs
  • 1 1/2 teaspoon salt
  • 3/4 c. mango chutney, such as Major Grey's, for garnish (optional)
  • 3-4 tbsp. minced fresh cilantro for garnish (optional)
