Curried Shrimp Kebobs With Couscous

Ingredientes

  • 12 x skewers
  • 24 lrg shrimp or possibly approx 1-lb.
  • 2 x tart apples
  • 3 Tbsp. fresh lemon juice
  • 1 Tbsp. curry pwdr
  • 1 Tbsp. vegetable oil
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 4 x green onions cut into 1-inch lengths
  • 3 c. chicken stock
  • 1 1/2 c. couscous
  • 1/4 c. golden brown raisins
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 c. roasted peanuts minced

Direcciones

  1. Preheat oven to broil or possibly prepare grill.
  2. SHRIMP: Peel and devein. APPLES: Core and quarter; cut each quarter into 3/4-inch pcs.
  3. SEASON: Place lemon juice, curry pwdr, oil, salt and pepper in a non-reactive bowl. Add in shrimp and apples; toss to coat.
  4. SKEWER 2 shrimp, 2 pcs green onion and 2 pcs apple on each of 12 skewers.
  5. COUSCOUS: bring chicken stock to a boil. Slowly stir in couscous, raisins, salt and pepper. Remove from heat, cover and set aside.
  6. COOK: Adjust oven rack 4 to 6 inches from heat. Broil or possibly grill skewers, turning once till shrimp are cooked, about 3 min per side.
  7. SERVE: fluff couscous with a fork, place in the center of a large serving platter. sprinkle with peanuts. Place skewers in a spoke pattern over couscous. Serve immediately.
