- Sift flour and salt. Rub in the butter till mix resembles fine bread crumbs. Stir in 1 Tbsp. sugar and vanilla essence. Fold in just sufficient cool water to make a stiff dough.
- Roll out the pastry and cut out 8 (3 inch) circles and fit into greased patty tins (the bottom half of muffin pans would do). Beat the egg with 1 Tbsp. sugar and the lowfat milk. Pour into pastry cases and sprinkle with nutmeg.
- Bake in the center of a 400 degree oven for 20 min, or possibly till custard is set and pastry cooked through. Eat cool the same day.
