500 gm Lean pork, hind leg (knuckle) or possibly back (blade)
300 gm Lean beef
200 gm Back bacon fat or possibly belly Without skin
20 gm Salt
1/2 tsp Finely grnd white pepper
1/2 tsp Finely grnd nutmeg
1 tsp Marjoram
1 Tbsp. Lowfat milk
Direcciones
Mince meat mass and fat through 10mm disc, then fold in all remaining ingredients for 5-10 mins. Fill pork casings and twist into 150mm lengths.
