Czech Potato Pancakes

These little snacks are popular street food in the Czech Republic, and they are available at roadside stalls and cafe's. Quick and easy to make, they are tasty adaptation of the classic flour-based pancake.

Ingredientes

  • 6 Large Red Potatoes, Peeled
  • 2 Large Eggs, Beaten
  • 2 Cloves Garlic, Crushed
  • 1 Cup All Purpose Flour
  • 1 Tsp. Fresh Marjoram, Chopped
  • 4 Tbsp. Butter
  • 4 Tbsp. Canola Oil
  • 1/2 Tsp. Salt
  • 1/4 Tsp. Coarsely Ground Black Pepper
  • Garnish:
  • 8 Oz. Non-Fat Sour Cream
  • 3 Tbsp. Fresh Parsley, Chopped
  • 1 Cup Tomatoes, Chopped

Direcciones

  1. Grate the potatoes, placing them in a bowl of water with a little bit of lemon juice to prevent browning; squeeze thoroughly dry, using a dish towel.
  2. Put the potatoes in a bowl with the eggs, garlic, flour, marjoram and seasoning. Mix well.
  3. Heat half the butter and oil together in a large frying pan, then add large spoonfuls of the potato mixture to form rounds. Carefully flatten the "pancakes" well with the back of a dampened spoon.
  4. Fry the pancakes until crisp and golden brown, then turn over and cook on the other side. Drain on paper towels and keep warm while cooking the rest of the pancakes, adding the remaining butter and oil to the frying pan as necessary.
  5. Serve the pancakes topped with sour cream, sprinkled with parsley, and accompanied by fresh, juicy tomato salad.
