I love that I live near Sam’s Club so I can stock up on everything from chicken to fruit. One of my favorite foods that I buy there is oatmeal. I always have an ample supply of oats, either in old-fashioned rolled oat form for baking and using in recipes like oatmeal cookies, raw oatmeal risotto, or high protein oatcakes. Or instant form for making a quick bowl of breakfast oatmeal or a Dairy Free Oatmeal Fruit Smoothie!

The health benefits of oatmeal

If it has oatmeal in it, I know my family will eat it! This is great, because I know how healthy oatmeal is for them.

In this month’s Healthy Living Made Simple Magazine, oats are given The Superfood Highlight. That’s because oats are good for you! Oatmeal has been shown to lower cholesterol, improve blood pressure, and reduce the risk of cardiovascular disease. Oatmeal can also help diabetics lower their need for insulin.

Spa time with oatmeal

Did you know that can make your own oatmeal bath soak from the oatmeal you have in your pantry?

Just take any kind of unflavored oatmeal and grind it in a blender or food processor until it’s been pulverized into a fine, dust-like powder. When the oatmeal powder is fine enough, you can then sift it through a fine mesh strainer to get a more even powder. If you wish, you can add a few drops of essential oil to the oatmeal to give it a nice scent.

An oatmeal smoothie for breakfast

This month’s Healthy Living Made Simple Magazine also has a terrific recipe for an Oatmeal Fruit Smoothie. I’ve made a few changes to the smoothie to make it dairy free like using soy milk and frozen strawberries and ice cubes instead of yogurt. I also substituted stevia for the honey. However, what’s great about my Dairy Free Oatmeal Fruit Smoothie recipe (or the original one) is that you can get all the ingredients right at Sam’s Club!

Honestly, I’d never thought of adding oatmeal to a smoothie. I always use oatmeal for baking or as a hot breakfast cereal. However, now that it’s getting warm out, the last thing I’d want for breakfast is a steaming bowl of oatmeal. With this cold yet satisfying Dairy Free Oatmeal Fruit Smoothie, you get all the benefits of oatmeal as well as fruit.

I also thought the idea of making it the night before, putting it in Mason jars with lids was a terrific way to save time in the morning. Just grab a jar out of the fridge and go! (Don’t forget a straw.) After drinking, toss the straw and put on the lid. That way you can safely store the dirty jar until you get home – no spills!

If your family finds that the smoothie is too thick, they can add more soy milk to the jar, put the lid back on and shake it up!

My son loved this smoothie so much that he already asked me to make it again. Can’t wait!

Dairy Free Oatmeal Fruit Smoothie

Directions

Bring water to a boil.

Add oats and return water to a boil. Then reduce heat and simmer for 5 minutes. Stir occasionally.

Add stevia, dried cranberries, apple and cinnamon and stir to combine.

Simmer 2 more minutes. Stir occasionally. Then cover and turn off heat and let sit for 5 minutes.

Add cooked oatmeal, soy milk, frozen (not thawed) strawberries, banana, and ice cubes to a blender. Cover and blend on high until strawberries and ice cubes are pulverized and mixture is creamy.

If smoothie mixture is too thick, add more soy milk and/or ice cubes and blend some more.

Prep Time: 10 Minutes

Cook Time: 10 Minutes

Total Time: 20 Minutes

Servings: Makes approximately 48 ounces

Serving size: Makes 4 (12 ounce) servings
