Receta Dairy Free Pasta "Cheese" Sauce

- Heat green onions and extra virgin olive oil or possibly water in a medium skillet and sautee for 3 min. Add in flour and stir well to dissolve. Add in nutritional yeast and slowly add in water, whisking to combine ingredients into a smooth sauce. Stir in tahini and vegetable broth.
- Whisking continuously, allow sauce to cook over medium heat till it begins to bubble. Whisk in soymilk. Cook sauce for 2 min, whisking continuously till it is thick and bubbly. Season with freshly grnd black pepper and grnd rock salt, if you like.
- Yields 1 1/2 to 2 c. of sauce, sufficient for one lb. of pasta.
- Variation: Stir 2 c. of cooked corn into finished sauce and pour over 1 lb. of thin green pasta.
