.%3C/p%3E%3Cp%3EWhen%20coming%20up%20with%20my%20recipe%20for%20this%20past%20months%20challenge,%20I%20wanted%20to%20come%20up%20with%20something%20that%20utilized%20an%20assortment%20of%20different%20Fall%20harvest%20veggies,%20but%20was%20also%20incredibly%20comforting.%20With%20scalloped%20potatoes%20being%20one%20of%20my%20favourite%20Fall%20comfort%20foods%20(my%20mom%20makes%20it%20every%20Thanksgiving!),%20I%20wanted%20to%20make%20my%20own%20version%20of%20that,%20but%20kicked%20up%20using%20an%20array%20of%20different%20vegetables%20like%20sweet%20potatoes,%20zucchini,%20carrots,%20and%20even%20a%20layer%20of%20saut%C3%A9ed%20kale!%20I%20give%20you%20my%20Creamy%20Vegetable%20Gratin!%3C/p%3E%3Cp%3EI%20loved%20all%20of%20the%20different%20layers%20of%20flavour%20that%20goes%20into%20this%20dish,%20with%20the%20star%20ingredient,%20cream,%20along%20with%20gruyere%20and%20parmesan%20cheese%20acting%20as%20the%20creamy%20glue%20to%20hold%20the%20casserole%20all%20together.%20This%20dish%20would%20be%20a%20fantastic%20addition%20to%20your%20family's%20Thanksgiving%20meal%20coming%20up%20this%20weekend!%20Give%20it%20a%20try%20and%20let%20me%20know%20how%20it%20goes!%3C/p%3E%3Cp%3ETip:%20Cut%20down%20on%20prep%20time%20by%20slicing%20all%20of%20the%20vegetables%20excluding%20the%20Yukon%20Gold%20potatoes%20in%20advance!%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EHeat%20a%20large%20saut%C3%A9%20pan%20to%20medium%20heat.%20Add%201%20tbsp%20butter.%20When%20butter%20is%20melted%20and%20begins%20to%20foam,%20add%20the%20shallot%20and%20sweat.%20Add%201%20minced%20garlic%20clove%20and%20cook%20until%20fragrant%20(20-30%20seconds).%20Add%20the%20kale%20and%20reduce%20to%20medium-low.%20Cook%20until%20kale%20until%20wilted,%20tossing%20occasionally.%20Season%20with%20salt%20and%20white%20pepper%20and%20set%20aside.%3C/p%3E%3Cp%3EWhile%20the%20kale%20is%20cooking,%20prepare%20the%20cream.%20Pour%20the%20cream%20into%20a%20small%20saucepan%20and%20set%20to%20medium%20heat.%20Cut%20a%20slit%20into%20the%20half%20piece%20of%20onion%20and%20stick%20a%20bay%20leaf%20inside.%20Poke%20the%20cloves%20into%20the%20onion%20and%20submerge%20in%20the%20cream%20along%20with%201%20sprig%20of%20thyme.%20Right%20when%20steam%20begins%20to%20come%20off%20of%20the%20cream,%20remove%20from%20heat,%20remove%20onion%20%20with%20spices%20and%20herbs,%20and%20set%20aside.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%C2%BA.%20Butter%20and%2011x7-inch%20glass%20baking%20dish%20and%20add%20a%20spoonful%20of%20the%20flavoured%20cream%20mixture.%20Add%201%20layer%20of%20sweet%20and%20yukon%20gold%20potatoes,%20making%20sure%20to%20lightly%20overlap%20the%20slices.%20Season%20lightly%20with%20salt%20and%20white%20pepper,%20and%20drizzle%20in%20some%20of%20the%20cream.%20Top%20with%20a%20light%20layer%20of%20Gruyere%20and%20Parmesan.%20Repeat%20process%20of%20layering%20in%20different%20slices%20of%20vegetables%20(a%20different%20vegetable%20on%20each%20layer),%20seasoning,%20and%20adding%20cream%20and%20cheese%20until%20vegetables%20reach%20the%20middle%20of%20the%20dish.%20Add%20the%20kale%20mixture%20to%20make%20the%20middle%20layer%20of%20the%20casserole,%20and%20repeat%20the%20vegetable,%20seasoning,%20cream,%20and%20cheese%20layering%20process%20until%20the%20vegetables%20reach%20the%20top%20of%20the%20baking%20dish.%3C/p%3E%3Cp%3EMelt%20the%20remaining%20butter%20in%20a%20small%20bowl%20in%20the%20microwave.%20Add%20in%20the%20remaining%20minced%20clove%20of%20garlic,%20the%20leaves%20from%20the%20remaining%20thyme%20sprigs,%20and%20panko%20breadcrumbs.%20Toss%20to%20coat.%20Sprinkle%20on%20top%20of%20the%20layered%20vegetables,%20along%20with%20any%20remaining%20cheese.%20Bake%20for%20about%2060-minutes%20or%20until%20tender%20when%20pierced%20with%20a%20knife.%20Serve%20immediately.%3C/p%3E%3Cp%3EListening%20To:%3C/p%3E%3Cp%3EFleetwood%20Mac%20-%20Rhiannon%20Live%201976%20(Stevie%20SLAYS%20this%20performance!)%3C/p%3E){kind=link}
