- Heat a frypan over high heat, add in the oil.
- Add in the onion, garlic and ginger and cook for 2-3 min, till the onion starts to brown. Add in the curry pwdr, cayenne and coconut and stir till well-combined.
- Add in the lentils, salt and lemon juice and stir in the lowfat yoghurt. Cook for a further 2 min and serve topped with minced cilantro. - great to eat with roti (or possibly tortillas if you cannot find roti) or possibly over basmati rice.
