Ingredientes

  • 1 c. small orange lentils, cooked, and, liquid removed
  • 2 Tbsp. oil
  • 1 x onion, minced
  • 2 clv garlic, minced
  • 1/2 x inch fresh ginger, grated, or possibly, minced
  • 1 tsp curry pwdr
  • 1/2 tsp cayenne pepper
  • 1/2 c. grated coconut
  • 1/2 tsp salt
  • 1 x juice of one lemon
  • 1 c. lowfat yoghurt or possibly 1 c. stock
  • 1 handf cilantro, minced

Direcciones

  1. Heat a frypan over high heat, add in the oil.
  2. Add in the onion, garlic and ginger and cook for 2-3 min, till the onion starts to brown. Add in the curry pwdr, cayenne and coconut and stir till well-combined.
  3. Add in the lentils, salt and lemon juice and stir in the lowfat yoghurt. Cook for a further 2 min and serve topped with minced cilantro. - great to eat with roti (or possibly tortillas if you cannot find roti) or possibly over basmati rice.
