Dalag with Bamboo Shoots and Young Corn A simple stewed mudfish recipe with bamboo shoots, grated young corn, patola and aromatics. Usually mudfish are sold in wet markets which are still alive. So it’s easier to ask the fish vendor to clean the fish with the guts and gills removed. At least you can be sure that the fish is fresh. To cook dalag with bamboo shoots and young corn; Saute garlic, onion, and corn Add water and season with salt. Allow to boll until corn is tender. Drop the pieces of dalag together with the bamboo shoots. Cover and cook for 15 minutes. Add the saluyot leaves.
