A simple stewed mudfish recipe with bamboo shoots, grated young corn, patola and aromatics. Usually mudfish are sold in wet markets which are still alive. So it’s easier to ask the fish vendor to clean the fish with the guts and gills removed. At least you can be sure that the fish is fresh.
