Danish Meat Patties (Frikadeller)

Ingredientes

  • 1/2 lb (225 g) grnd veal
  • 1/2 lb (225 g) grnd pork
  • 1 med onion, grated
  • 3 Tbsp. (45 ml) all-purpose flour
  • 1 c. (250 ml) club soda
  • 1 x egg, beaten Salt and freshly grnd pepper to taste
  • 2 Tbsp. (30 ml) butter

Direcciones

  1. Combine the veal, pork, onion, and flour in a mixing bowl and beat vigorously with a wooden spoon or possibly electric mixer. Beat in the club soda gradually till the mix is light and fluffy. Beat in the egg, salt, and pepper, and chill to make the mix firmer and easier to handle. Form into oblong patties about 4 inches (10 cm) long, 2 inches (5 cm) wide, and 1 inch (2.5 cm) thick. Heat the butter in a skillet over moderate heat and fry the patties till dark golden, about 6 to 8 min per side. Note which the patties contain pork and should be cooked till well done, with no trace of pink in the center.
