.%20All%20I%20did%20was%20place%202%20cups%20of%20sliced%20strawberries%20in%20a%20small%20sauce-pan%20and%20cooked%20them%20over%20medium%20heat%20with%203%20tbsp%20of%20granulated%20sugar.%20I%20waited%20for%20the%20strawberries%20to%20excrete%20their%20juices,%20creating%20a%20beautiful,%20thick%20and%20syrupy%20strawberry%20compote.%20I%20simply%20mixed%20the%20strawberries%20with%20the%20apple-raisin-rum%20filling%20and%20voila!%20Strawberry-Apple%20Strudel%3C/p%3E%3Cp%3EApple%20Strudel%3C/p%3E%3Cp%3EThe%20May%20Daring%20Bakers%E2%80%99%20challenge%20was%20hosted%20by%20Linda%20of%20make%20life%20sweeter!%20and%20Courtney%20of%20Coco%20Cooks.%20They%20chose%20Apple%20Strudel%20from%20the%20recipe%20book%20Kaffeehaus:%20Exquisite%20Desserts%20from%20the%20Classic%20Caf%C3%A9s%20of%20Vienna,%20Budapest%20and%20Prague%20by%20Rick%20Rodgers.%3C/p%3E%3Cp%3EPreparation%20time%3C/p%3E%3Cp%3E1.%20Combine%20the%20flour%20and%20salt%20in%20a%20stand-mixer%20fitted%20with%20the%20paddle%20attachment.%20Mix%20the%20water,%20oil%20and%20vinegar%20in%20a%20measuring%20cup.%20Add%20the%20water/oil%20mixture%20to%20the%20flour%20with%20the%20mixer%20on%20low%20speed.%20You%20will%20get%20a%20soft%20dough.%20Make%20sure%20it%20is%20not%20too%20dry,%20add%20a%20little%20more%20water%20if%20necessary.%3C/p%3E%3Cp%3ETake%20the%20dough%20out%20of%20the%20mixer.%20Change%20to%20the%20dough%20hook.%20Put%20the%20dough%20ball%20back%20in%20the%20mixer.%20Let%20the%20dough%20knead%20on%20medium%20until%20you%20get%20a%20soft%20dough%20ball%20with%20a%20somewhat%20rough%20surface.%202.%20Take%20the%20dough%20out%20of%20the%20mixer%20and%20continue%20kneading%20by%20hand%20on%20an%20unfloured%20work%20surface.%20Knead%20for%20about%202%20minutes.%20Pick%20up%20the%20dough%20and%20throw%20it%20down%20hard%20onto%20your%20working%20surface%20occasionally.%3C/p%3E%3Cp%3EShape%20the%20dough%20into%20a%20ball%20and%20transfer%20it%20to%20a%20plate.%20Oil%20the%20top%20of%20the%20dough%20ball%20lightly.%20Cover%20the%20ball%20tightly%20with%20plastic%20wrap.%20Allow%20to%20stand%20for%2030-90%20minutes%20(longer%20is%20better).%203.%20It%20would%20be%20best%20if%20you%20have%20a%20work%20area%20that%20you%20can%20walk%20around%20on%20all%20sides%20like%20a%2036%20inch%20(90%20cm)%20round%20table%20or%20a%20work%20surface%20of%2023%20x%2038%20inches%20(60%20x%20100%20cm).%20Cover%20your%20working%20area%20with%20table%20cloth,%20dust%20it%20with%20flour%20and%20rub%20it%20into%20the%20fabric.%20Put%20your%20dough%20ball%20in%20the%20middle%20and%20roll%20it%20out%20as%20much%20as%20you%20can.%3C/p%3E%3Cp%3EPick%20the%20dough%20up%20by%20holding%20it%20by%20an%20edge.%20This%20way%20the%20weight%20of%20the%20dough%20and%20gravity%20can%20help%20stretching%20it%20as%20it%20hangs.%20Using%20the%20back%20of%20your%20hands%20to%20gently%20stretch%20and%20pull%20the%20dough.%20You%20can%20use%20your%20forearms%20to%20support%20it.%204.%20The%20dough%20will%20become%20too%20large%20to%20hold.%20Put%20it%20on%20your%20work%20surface.%20Leave%20the%20thicker%20edge%20of%20the%20dough%20to%20hang%20over%20the%20edge%20of%20the%20table.%20Place%20your%20hands%20underneath%20the%20dough%20and%20stretch%20and%20pull%20the%20dough%20thinner%20using%20the%20backs%20of%20your%20hands.%20Stretch%20and%20pull%20the%20dough%20until%20it's%20about%202%20feet%20(60%20cm)%20wide%20and%203%20feet%20(90%20cm)%20long,%20it%20will%20be%20tissue-thin%20by%20this%20time.%20Cut%20away%20the%20thick%20dough%20around%20the%20edges%20with%20scissors.%20The%20dough%20is%20now%20ready%20to%20be%20filled.%3C/p%3E%3Cp%3EThe%20strudel%20is%20rolled-up,%20scored%20and%20placed%20on%20the%20baking%20tray%3C/p%3E%3Cp%3EI%20had%20a%20lot%20of%20fun%20rolling%20and%20shaping%20the%20strudel%20dough.%20It%20was%20actually%20a%20lot%20of%20fun!%20The%20pasty%20was%20wonderfully%20light%20and%20tender,%20especially%20after%20letting%20the%20dough%20rest%20for%20quite%20some%20time.%20The%20filling%20was%20perfect!%20Not%20too%20sweet%20and%20not%20too%20tart...%20just%20right.%20My%20sisters%20are%20still%20at%20school%20right%20not,%20but%20when%20they%20come%20home%20I'm%20going%20to%20serve%20up%20a%20nice%20slice%20of%20strudel%20with%20a%20scoop%20of%20ice-cream%20on%20the%20side...%20mmmm,%20what%20a%20perfect%20summer-time%20snack.%3C/p%3E%3Cp%3EBoy%20are%20my%20parents%20and%20siblings%20going%20to%20miss%20me%20when%20I%20move%20out.%20I%20mean,%20who's%20going%20to%20surprise%20them%20with%20tasty%20bakes%20on%20random%20occasions%20when%20I'm%20not%20around??%20And%20who's%20going%20to%20eat%20all%20of%20my%20tasty%20bakes%20when%20I%20make%20them%20all%20on%20my%20lonesome??%20Wait...%20I've%20got%20it!%20Thank%20you%20Daring%20Bakers...%20you'll%20give%20me%20an%20excuse%20to%20invite%20my%20family%20over%20at%20least%20once%20a%20month%20to%20enjoy%20a%20relaxing%20hang-out%20and%20treat-time%20with%20me%20in%20my%20new%20condo.%20Yay!%3C/p%3E){kind=link}
