Ingredientes

  • 3/4 very full cup of semi sweet chocolate morsels ( you will need another 1/2 cup to drizzle over the cookies )
  • 1 cup of all purpose flour (spooned into the cup and leveled)
  • 1/4 cup of unsweetened cocoa powder
  • 1/4 teaspoon of salt
  • 1/2 teaspoon of baking soda
  • 4 tablespoons of unsalted butter cut into pieces
  • 1/2 cup of packed light brown sugar
  • 1 large egg

Direcciones

  1. On a medium size bowl whisk together flour, cocoa powder, salt and baking soda and reserve.
  2. For this part you will use a double boiler, which is a pot with simmering water (medium low heat) and a heat proof bowl over the pot of water and you will add chocolate, sugar and butter, you need to constantly mix it until almost melted completely, take it off from the heat and keep mixing it until completely melted and pour this mixture into your KitchenAid Mixer bowl.
  3. Let the chocolate mix cool off and with the paddle attachment on start beating it. Add egg and start beating it until mixed (on low speed), now start adding gradually the flour mix and your dough will become a ball.
  4. Preheat oven to 350F.
  5. Cut the ball into 2 pieces and reserve 1.
  6. Lay 1 piece of parchment paper over the counter, put dough and lay another piece of wax paper over it. With the help of a rolling pin, roll the dough into 1/4 of an inch.
  7. On a cookie sheet lay wax paper. Now with a cookie cutter shape your cookie and pull sides (left over) and pull the cookies gently from there and set it on your baking sheet leaving some room between each. After you get all those cookies from that batch, take the left overs and roll it again and cut cookies, keep doing the same until all the dough is gone, then take the other half and you will do same process.
  8. Put the baking sheets with the cookies in the freezer for 20 minutes before baking them (This is VERY important)
  9. Bake the cookies for about 6-8 minutes and let them cool down on a wire rack.
  10. Now, lets decorate it. Melt the semi sweet chocolate morsels in a double boiler and pour it on a thick zip lock bag. Cut the tip of the zip lock (very tiny hole) and drizzle the chocolate over the cookies. Here is a link to see how to do it http://www.youtube.com/watch?v=rBYFQFqPSEw
  11. Let the chocolate on the cookies dry before (you can either let them dry on the rack or put the rack in your fridge for a few minutes.
  12. I made about 50 cookies with this recipe.
