Receta Dark Chocolate Peanut Chews

Does your chocolate need a friend? Mine does, but a date would be even better. The recipe redux theme for February is about sharing a favorite chocolate combination in honor of Valentines Day.
I am a lover of deep dark chocolate, and it’s safe to say that I may have more than one favorite chocolate combination. My most favorite is chocolate, caramel and peanuts. The only problem is that caramel has so much sugar, even if it’s homemade.
Enter dates. . . Who knew these dried fruits can taste like caramel? I certainly didn’t until a few years ago. Dates are naturally sweet, and are good source of fiber, iron, calcium, and manganese. This makes me happy, because I don’t have to feel guilty when I indulge in dark chocolate, peanut chews.
Dark Chocolate Peanut Chews
INGREDIENTS
- For Chocolate:
- 1 cup of dark cacao or coco powder - divided
- 1 cup of coconut oil - divided
- 3 tablespoons of real maple syrup
- 10 pitted medjool dates
- 1 teaspoon of organic or natural peanut butter
- 1/4 cup of unsalted roasted peanuts INSTRUCTIONS
- melt 1/2 cup of coconut oil in a pan over medium heat
- add the cacao powder and mix well, turn heat off
- stir in 1 1/2 tablespoons of syrup and mix in well
- pour chocolate mixture into lined cupcake tins, or silicone candy molds until they are about 1/4 full
- place in refrigerator for approximately 45 minutes to an hour
- meanwhile make the "caramel" filling
- place the dates into a food processor and process until they form a ball
- add the peanut butter and mix for 30 seconds more
- place mixture in refrigerator for 30 minutes
- remove the hardened chocolate and date caramel mixture from the refrigerator
- spread a layer of caramel on top of the chocolate and top with peanuts place back in refrigerator
- melt the remaining coconut oil in a pan and stir in the cacao, mix well and turn heat off
- add the remaining maple syrup and stir well
- pour the chocolate over the chocolate, date caramel and peanut mixture
- refrigerate until chocolate has hardened
