Receta Dark Chocolate Trail Mix Rounds

I don’t like sugar, but I do love sweet tasting foods. When I am struck with a sweet tooth, my remedy is naturally sweetened foods, and that’s why I always have California raisins in my pantry. California raisins are perfect for taming a sweet tooth, they are sweet, but they are naturally sweet, with no added sugars. Plus, one quarter cup of raisins offers 9% of your daily fiber and potassium, and 6% of your daily iron. Raisins are so convenient and portable, making healthy, on-the-go snacking a breeze. Another bonus — they are a great value, too! According to the USDA, raisins are the most economical dried fruit.
Since the holidays are rapidly approaching, and food is the name of the game this time of year, many families are looking for more wholesome ingredients as without feeling deprived. I’ve found that adding raisins is a perfect way to add sweetness, the natural way.
I am sharing my recipe for Dark Chocolate Trail Mix Rounds, a bitter chocolate sweetened with California raisins and a little bit of honey.
First I made the trail mix without the California raisins
Then I lightly toasted the nuts and added the California raisins for sweetness
The trail mix is placed in cups. . .
The chocolate is made and poured over the trail mix. . .
And chilled. . . .
Here’s the recipe. . .
Dark Chocolate Trail Mix Rounds
INGREDIENTS
FOR THE TRAIL MIX:
- 1/2 Cup Almonds
- 1/2 Cup Cashews
- 1/3 Cup Pepitas
- 3/4 Cup Coconut Flakes
- 1 1/2 Cups California Raisins
- FOR THE CHOCOLATE:
- 1 Cup Cacao or Coco
- 1 Cup Coconut Oil
- 2 Tablespoons Honey or Maple Syrup
- 1 Teaspoon Vanilla
INSTRUCTIONS
Preheat Oven to 350
Line cookie sheet with parchment paper, add nuts and coconut flakes to the pan
Toast in oven for 10 to 15 minutes, until mixture begins to turn light brown
Remove from oven to cool and add California Raisins
If using cupcake tins or silicone cups, place one teaspoon of trail mix into each cup or spread trail mix out onto a rimmed dish approximately 8X5 in size
Make the chocolate by melting the coconut oil over medium heat
Once coconut oil has melted, stir in the chocolate and remove from heat
Add the honey and vanilla
Continue to stir until all ingredients are well blended, add the honey or syrup and stir well
Pour 1 tablespoon of chocolate mixture over the trail mix, or if using rimmed pan pour chocolate mixture evenly over trail mix
Place in refrigerator and chill
Remove from cups and store in refrigerator
