Date And Lentil Rice Pilaf

Ingredientes

  • 2 c. rice, long grain
  • 1 c. lentils
  • 70 gm butter
  • 2 1/2 c. chicken stock
  • 1 x onions, medium
  • 250 gm dates
  • 125 gm dry apricots
  • 1/2 c. almonds, slivered
  • 1/2 c. raisins

Direcciones

  1. Boil rice till almost cooked. Cover lentils with water and cook for 20 min till soft.
  2. Dice onions, apricots and dates.
  3. Dissolve half the butter in water over heat. Saute/fry onion in remaining butter till soft, add in dates, apricots, almonds and raisins. Pour 1/2 butter water into casserole dish then add in, in layers, 1/3 of the rice, 1/2 of the fruit mix, 1/2 of the lentils, 1/3 of the rice, remaining fruit mix, remaining lentils, then remaining rice and pour over the remaining butter-water.
  4. Cover with cloth then put lid on, simmer over low heat for 30 to 40 min.
