A healthy sweet made with dates/khajur and nuts, easy to prepare, packed with all the goodies and melt in the mouth. This very underrated fudge is the sweet for the season in my household and its sutle flavor is relished after every meal. It is also a nutritious bite specially for children and the whole family during the cold months.

Dates 500 gm
Ghee/clarified butter 2 tbpsn
Cashew nuts/Kaju 1/4 cup
Almonds/Badam 1/4 cup
Pistachios/Pista 1/4 cup
Poppy seeds/khuskhus 1tbspn
Green cardamom/elaichi powder 1 tspn
Nutmeg powder 1/2 tspn
Baking paper and aluminum foil

Coarsely grind dates in a mixer and set aside.
Take a hot non-stick pan, add the ghee and saute the dry fruits and half poppy seeds lightly.
Throw in the dates and mix .
Saute until combined thoroughly.
Remove from flame and keep aside.
Add the cardamon and nutmeg powder, mix .
Take the aluminum foil with the baking sheet. Sprinkle the other half of poppy seed evenly over it.
Place the warm dates mixture on it, like a sausage and roll over the poppy seeds.
Seal the foil tight into a cylinder shape and refrigerate up to 4 hours.
Cut into 1/2 inch rounds and serve.
Store in a airtight container in the fridge up to 2 weeks.
