Ingredientes

  • 13 lbs beef strip, julienne
  • 9 oz oil
  • 1 lb onion, diced
  • 1 tsp pepper, black
  • 7 cups beef broth, low-sodium
  • 6 oz flour, all purpose
  • 2 cups water
  • 9 Tbsp Worcestershire sauce
  • 3 cups sour cream
  • 3 lbs mushrooms, canned, drained

Direcciones

  1. Heat oil in skillet. Add beef strips in batches so as not to crowd the pan and lower the temperature of the oil. Brown all the beef well and remove to hotel pan.
  2. Add diced onion to skillet and color slightly. Add browned beef back to skillet and deglaze with beef broth. Lower temperature to a simmer and cook for 1 hour or until meat is very tender.
  3. Combine water, flour, and Worcestershire sauce until smooth. Add to meat and stir until thickened. Cook for an additional five minutes then remove from heat.
  4. Combine the sour cream and mushrooms and stir with wire whip to remove any lumps. Add to beef and bring back up to temperature (180). Do not boil.
