%20have%20dragged%20me%20away%20from%20the%20computer.%20I%20hope%20you'll%20forgive%20the%20delinquency%20of%20the%20last%20couple%20days,%20but%20when%20the%20world%20finds%20itself%20covered%20in%20a%20foot%20thick%20blanket%20of%20powdery%20white%20and%20I'm%20in%20the%20mood%20to%20watch%20Christmas%20movies,%20I'm%20unlikely%20(at%20best)%20to%20pry%20myself%20from%20the%20couch%20to%20do%20anything.%20This%20was%20just%20such%20a%20weekend.%3C/p%3E%3Cp%3EHowever,%20Sunday%20afternoon%20found%20me%20waking%20up%20(as%20from%20hibernation)%20and%20wanting%20a%20cookie.%20Specifically,%20I%20wanted%20one%20of%20the%20ginger%20sandwich%20cookies%20I%20baked%20for%20our%20party%20last%20week.%20So%20I%20peeled%20myself%20away%20from%20the%20couch%20and%20out%20from%20under%20the%20blanket%20and%20headed%20to%20the%20kitchen%20to%20bake.The%20recipe%20came%20from%20a%20Summer%20issue%20of%20Fine%20Cooking%20(yes,%20I%20agree%20these%20would%20be%20delicious%20on%20a%20picnic,%20but%20really,%20their%20spiciness%20and%20rich%20creaminess%20are%20SO%20perfectly%20suited%20to%20Winter,%20I'm%20not%20sure%20who%20thought%20to%20make%20them%20in%20June.%20Anyway,%20for%20the%20party%20I%20went%20with%20the%20recipe%20and%20made%20the%20filling%20a%20lemon%20cream.%20Yesterday%20though,%20I%20wanted%20something%20a%20little%20warmer,%20a%20little%20spicier.%20So%20I%20went%20with%20a%20cinnamon%20cream%20instead.%3C/p%3E%3Cp%3EAlso,%20(you%20could%20have%20seen%20this%20coming)%20the%20original%20recipe%20would%20have%20yielded%20a%20spicy,%20but%20mellow%20cookie%20and%20that%20just%20wouldn't%20do.%20So%20I%20doubled%20the%20measurements%20of%20all%20the%20spices%20and%20amped%20up%20the%20filling%20with%20some%20extra%20vanilla.%3C/p%3E%3Cp%3EThe%20resulting%20cookie?%20Not%20subtle.%20But%20just%20my%20kind%20of%20treat.%20These%20would%20be%20well%20suited%20to%20a%20cup%20of%20Bailey's%20hot%20chocolate,%20regular%20hot%20chocolate,%20warm%20milk%20(if%20that's%20your%20kind%20of%20thing),%20or%20coffee,%20just%20after%20dinner.%20Also,%20I%20recommend%20making%20the%20cookies%20as%20small%20as%20possible%20-%20bite%20sized%20would%20be%20perfect.%20As%20it%20is,%20my%20cookies%20turned%20out%20to%20be%20about%20a%20three-bite%20cookie,%20which%20is%20lovely.Ginger%20Sandwich%20Cookies%3C/p%3E%3Cp%3Ewith%20Lemon%20Cream%20or%20Cinnamon%20Cream%3C/p%3E%3Cp%3Eadapted%20from%20Fine%20Cooking%3C/p%3E%3Cp%3EFor%20the%20cookies:%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20350.%20Line%203%20baking%20sheets%20with%20parchment/silpat/butter%20(if%20you%20don't%20have%20the%20former%20options).%3C/p%3E%3Cp%3EWhisk%20the%20flour,%20spices,%20baking%20soda,%20and%20salt%20together%20in%20a%20bowl.%3C/p%3E%3Cp%3EBeat%20the%20butter%20and%20sugars%20together%20until%20light%20and%20fluffy.%20(I%20wonder%20if%20it%20wouldn't%20make%20sense%20to%20try%20the%20America's%20Test%20Kitchen%20'reverse%20creaming'%20method%20to%20control%20the%20puffiness%20here...)%3C/p%3E%3Cp%3EAdd%20the%20molasses,%20egg,%20and%20vanilla.%20Beat%20until%20incorporated.%3C/p%3E%3Cp%3EOn%20low%20speed,%20gradually%20add%20the%20flour%20mixture%20and%20mix%20until%20incorporated.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out,%20shape%20it%20into%20a%20disk%20(think%20about%20pie%20dough)%20and%20put%20it%20in%20the%20fridge%20for%20an%20hour.%3C/p%3E%3Cp%3EPut%20some%20sugar%20in%20a%20bowl.%3C/p%3E%3Cp%3ERoll%20small%20pinches%20(~1%20t)%20of%20dough%20into%20balls%20and%20roll%20in%20sugar%20to%20coat.%3C/p%3E%3Cp%3EArrange%20the%20balls%20on%20the%20baking%20sheets%20about%202%22%20apart.%20(Original%20recipe%20suggests%20flattening%20the%20cookies%20with%20the%20bottom%20of%20a%20glass,%20which%20seems%20like%20a%20good%20idea!)%3C/p%3E%3Cp%3EBake%20until%20the%20cookies%20feel%20dry%20to%20the%20touch%20and%20begin%20to%20firm%20up.%20Bake%20circa%2013%20minutes.%20(I%20have%20mixed%20feelings%20about%20how%20long%20to%20bake%20these%20cookies%20-%20I've%20both%20overbaked%20and%20underbaked%20them%20and%20every%20outcome%20has%20had%20pluses%20and%20minuses.%20The%20longer%20they%20bake%20-%20to%20a%20point,%20obviously%20-%20the%20better%20they%20look%20when%20cool,%20but%20they%20get%20really%20hard.)%3C/p%3E%3Cp%3ECool%20completely%20on%20racks.%3C/p%3E%3Cp%3EFor%20LEMON%20Cream:%3C/p%3E%3Cp%3E4%20oz.%20cream%20cheese,%20softened%20(I%20used%208%20oz.)%3C/p%3E%3Cp%3E1%201/2%20c%20powdered%20sugar%20(I%20used%20~3%20c)%3C/p%3E%3Cp%3Ezest%20of%20one%20lemon%20(I%20used%20twice%20that)%3C/p%3E%3Cp%3EMix%20the%20cream%20cheese%20and%20lemon%20zest%20till%20smooth.%3C/p%3E%3Cp%3EGradually%20add%20the%20powdered%20sugar%20and%20mix%20until%20smooth.%3C/p%3E%3Cp%3EFor%20CINNAMON%20Cream:%3C/p%3E%3Cp%3ESame%20as%20above,%20but%20without%20lemon%20zest%20and%20WITH%201%201/2%20T%20cinnamon%20(or%20to%20taste)%20and%201%20t%20vanilla%20extract.%3C/p%3E%3Cp%3EAssemble%20cookie%20sandwiches!%3C/p%3E){kind=link}
