There’s no doubt that this is my new favorite magazine for the summer!!! I have been cooking up a storm out of this mag and will be sharing with you all in case you haven’t gotten around to picking one up yourself!!
Deen Bros. Oatmeal-Toffee Cookies
INGREDIENTS:
- 1 cup butter, softened
- 1 1/2 cups firmly packed brown sugar
- 1/2 cup sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 3/4 cup flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3 cups quick-cooking oats
- 1 (8-ounce) package Heath Bit’s O’ Brickle Toffee Bits
DIRECTIONS:
Preheat oven to 350 degrees. Line baking sheets with parchment paper or Silpat liner. In a large bowl, beat butter and sugars at medium-high speed with a mixer until fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In a medium bowl, combine flour, baking soda, baking powder and salt. Gradually add to butter mixture, beating until combined. Add oats and chocolate-covered toffee bits, beating until combined. Drop batter by heaping tablespoonfuls onto prepared baking sheets. Bake for 10-12 minutes or until lightly browned. Let cool on pans for 2 minutes. Remove from pans, and cool completely on wire racks.
and then smash a scoop of ice cream between 2 cookies–heavenly!!
