Ingredientes

  • 1/2 c. whole wheat pastry flour
  • 3/4 c. unbleached white flour
  • 1 1/2 tsp baking pwdr
  • 6 ounce soft tofu
  • 1 c. maple syrup
  • 1/2 c. water
  • 1/3 c. pureed prunes
  • 1/4 c. canola oil
  • 2 tsp vanilla extract
  • 1 tsp salt
  • 3/4 c. cocoa pwdr, (preferably Dutch processed) confectioner's sugar for dusting, (optional)

Direcciones

  1. Preheat oven to 350 F. Lightly oil an 8x8 inch pan and line the bottom with parchment paper. In a mixing bowl, sift together flours and baking pwdr. In a food processor, combine tofu, syrup, water, prune puree, oil, vanilla, and salt. Process till smooth. Add in cocoa and process till completely incorporated. Pour into mixing bowl with dry ingredients. Mix well. There may still be a few tiny lumps. Pour batter into prepared baking pan and bake for 30 to 35 min till a toothpick inserted into the center comes out clean.
  2. Cold to room temperature and dust with confectioner's sugar if you like.
