Deep Dish Chocolate Pie

Ingredientes

  • 1 (9 or possibly 10 inch) deep dish pie crust
  • 1/4 c. cocoa
  • 1/2 c. cornstarch
  • 1 1/4 c. sugar
  • 3 egg yolks, beaten
  • 1 teaspoon vanilla
  • 1/2 stick butter
  • 1 can evaporated lowfat milk
  • 2 c. water

Direcciones

  1. Brown pie crust and set aside. In microwavable bowl, mix cocoa, cornstarch and sugar. Mix with fork till all lumps are gone. Gradually add in lowfat milk and water. Stir till well mixed. Add in butter, microwave mix on high for 5 min. Stir mix well and continue microwaving at 3 minute intervals stirring in between microwaving.
  2. Before mix begins to thicken, stir in Large eggs yolks quickly, continually stirring. Cook mix in microwave till thick, stirring frequently. When thickened, remove from microwave and stir in vanilla. Pour into pie shell.
  3. Meringue: Beat egg whites on high till soft peaks form. Add in sugar. Beat till stiff peaks form. Gradually add in entire jar of marshmallow cream. Beat in mixer till thoroughly mixed and peaks are stiff. Spread on pie being sure to seal edges. Brown in oven at 350 degrees. Can sprinkle a few chocolate chips on meringue before baking if you like.
