%3C/p%3E%3Cp%3EAlrighty,%20this%20is%20the%20last%20of%20my%20general%3C/p%3E%3Cp%3Eposts%20about%20our%20adventures%20with%20Matt%20&%20Dawnen.%3C/p%3E%3Cp%3ERaw%20Potluck%3C/p%3E%3Cp%3EEvery%3C/p%3E%3Cp%3E4th%20Tuesday%20of%20the%20month%20their%20Church's%20health%20group%20likes%20to%20get%3C/p%3E%3Cp%3Etogether%20in%20order%20to%20share%20a%20raw%20potluck%20and%20exchange%20ideas%20and%20tips.%3C/p%3E%3Cp%3EOften%20times%20Matt%20does%20a%20little%20food%20demo%20but%20since%20we%20were%20in%20town%20I%20was%20given%20the%20honor.%3C/p%3E%3Cp%3EMatt%20telling%20them%20a%20little%20about%20Don%20and%20I%20before%20passing%20the%20torch%20over%20to%20me.%3C/p%3E%3Cp%3EMy%20favorite%20thing%20to%20demonstrate%20are%20raw%20soups,%20as%20these%20are%20such%20a%20big%20staple%20in%20our%20diet.%20They're%20so%20simple%3C/p%3E%3Cp%3Eand%20nutritious%20yet%20surprisingly%20few%20people%20are%20into%20them.%20It's%20also%20a%3C/p%3E%3Cp%3Egood%20opportunity%20to%20pass%20on%20the%20info%20about%20the%20Omni%20blender,%20a%20great%3C/p%3E%3Cp%3Ealternative%20to%20the%20more%20common%20Vitamix%20and%20Blendtec%20at%20a%20much%20more%3C/p%3E%3Cp%3Eaffordable%20price.%3C/p%3E%3Cp%3ENotice%20Mr.%20Bean%20next%20to%20Donnie?%3C/p%3E%3Cp%3EI%20could%20hardly%20believe%20the%20turn%20out;%20one%20of%20the%20largest%20potlucks%20we've%3C/p%3E%3Cp%3Eattended!%20They%20were%20a%20wonderful%20group,%20so%20keenly%20interested%20and%3C/p%3E%3Cp%3Eattentive.%3C/p%3E%3Cp%3EBeanie%20was%20such%20a%20good%20boy.%3C/p%3E%3Cp%3EBrian%20made%20sure%20to%20keep%20him%20company%20and%20well%20entertained.%3C/p%3E%3Cp%3EThe%20potluck%20spread%20was%20both%20beautiful%20and%20bountiful!%3C/p%3E%3Cp%3EYou%20know%20how%20it%20is...%20Gotta%20document%20it%20all!%20;-)%3C/p%3E%3Cp%3EA%20yummy%20dish%20made%20with%20sprouted%20wild%20rice%20and%20marinated%20squash%3C/p%3E%3Cp%3EMatt%20had%20brought%20his%20latest%20creation:%20a%20salad%20with%20a%20warm%20curry%20dressing.%20This%20photo%20was%20taken%20before%20he%20added%20the%20latter%20though,%20something%20he%20does%20just%20before%20serving.%3C/p%3E%3Cp%3EKale%20chips%3C/p%3E%3Cp%3EStuffed%20peppers%3C/p%3E%3Cp%3EWe%20were%20blessed%20with%20a%20few%20scrumptious%20desserts%20too!%3C/p%3E%3Cp%3EFeasting%20away%3C/p%3E%3Cp%3EOnce%20our%20bellies%20were%20full%20we%20had%20some%20good%20conversations%20with%20several%20members%20of%20the%20group.%3C/p%3E%3Cp%3EI%20was%20also%20asked%20to%20sign%20a%20few%20books.%20;-)%3C/p%3E%3Cp%3ELast%20Supper%3C/p%3E%3Cp%3EFor%20our%20last%20evening%20in%20Oregon%20we%20went%20over%20to%20Matt%20&%20Dawnen's%20trailer%20for%20dinner.%20He%20prepared%20lovely%20and%20original%20appetizers%20for%20us.%3C/p%3E%3Cp%3EOn%3C/p%3E%3Cp%3Ecouple%20of%20pieces%20of%20Eggplant%20Bacon.%20Yum!%3C/p%3E%3Cp%3EHow%20To%20Make%20Tomato%20Reduction:%3C/p%3E%3Cp%3EPlace%20roughly%20chopped%20tomatoes%20in%20a%20blender%20container.%3C/p%3E%3Cp%3EAdd%20raw%20sweetener%20such%20as%20honey%20or%20agave,%20a%20little%20cold%20pressed%20olive%20oil,%20Celtic%20sea%20salt%20and%20a%20big%20handful%20of%20dried%20basil.%3C/p%3E%3Cp%3EBlend%20on%20low%20using%20the%20tamper;%20you%20want%20to%20leave%20the%20mixture%20chunky,%20similar%20to%20salsa.%3C/p%3E%3Cp%3EPour%20mixture%20in%20a%20large%20Pyrex%20dish.%3C/p%3E%3Cp%3EAdd%202%20cups%20of%20finely%20cubed%20onion%20and%20mix%20well.%3C/p%3E%3Cp%3EPlace%20dish%20in%20dehydrator%20on%20high%20heat%20for%20a%20while,%20stirring%20as%20soon%20as%20the%20top%20dries%20out.%20No%20worries,%20it%20won't%20cook%20the%20tomatoes%20as%20it%20will%20take%20a%20while%20for%20the%20actual%20temperature%20of%20the%20food%20to%20climb%20up%20due%20to%20the%20high%20water%20content.%3C/p%3E%3Cp%3EWhen%20reduction%20gets%20to%20around%20118%20degrees%20(this%20is%20when%20an%20infrared%20thermometer%20comes%20in%20handy!),%20turn%20the%20dial%20down.%3C/p%3E%3Cp%3EContinue%20reducing%20until%20the%20desired%20consistency%20is%20reached.%3C/p%3E%3Cp%3EMatt's%20Notes:%3C/p%3E%3Cp%3E~%20You%20may%20need%20to%20use%20a%20metal%20scraper%20to%20mix%20the%20dried%20chunks%20back%20into%20the%20reduction%20and%20break%20it%20up%20into%20small%20pieces.%3C/p%3E%3Cp%3E~%20If%20you%20wish,%20you%20can%20stop%20the%20dehydration%20sooner%20and%20have%20a%20tomato%20spread%20or%20spaghetti%20sauce.%3C/p%3E%3Cp%3E~%20The%20sauce%20version%20freezes%20really%20well;%20simply%20warm%20up%20in%20the%20dehydrator.%3C/p%3E%3Cp%3EMatt%3C/p%3E%3Cp%3Eshowed%20me%20how%20he%20makes%20yet%20another%20of%20his%20specialties%20-%20Veggie%20Stew%3C/p%3E%3Cp%3E(yep,%20I'll%20also%20be%20sharing%20his%20technique%20in%20an%20upcoming%20post)%20-%20which%20we%20enjoyed%3C/p%3E%3Cp%3Eas%20the%20main%20course.%3C/p%3E%3Cp%3E%22Smile%20Carmi!%22%20Don't%20know%20if%20you%20can%20tell,%20but%20I%20wasn't%20feeling%20too%3C/p%3E%3Cp%3Ewell%20that%20day%20as%20I%20was%20recovering%20from%20doing%20a%20liver%20flush.%3C/p%3E%3Cp%3EBrian%20also%20joined%20us%20for%20the%20evening.%20As%20usual%20the%20animals%20were%20all%20over%20him.%3C/p%3E%3Cp%3EBeanie's%20Back!%3C/p%3E%3Cp%3EMr.%3C/p%3E%3Cp%3EBean%20had%20sooo%20much%20energy%20the%20last%203%20or%204%20days%20of%20our%20stay.%20It%20was%20nice%3C/p%3E%3Cp%3Eto%20see%20him%20feeling%20better%20and%20his%20leg%20injuries%20healing.%3C/p%3E%3Cp%3EMatt%3C/p%3E%3Cp%3Eleft%20the%20little%20guy%20with%20me%20one%20afternoon%20while%20he%20and%20Don%20went%3C/p%3E%3Cp%3Eshopping.%20It%20was%20the%20first%20time%20that%20Beanie%20and%20Puss%20got%20to%20spend%20time%3C/p%3E%3Cp%3Etogether.%20He%20was%20like%20an%20energy%20bunny%20and%20kept%20wanting%20to%20play%20with%20her,%3C/p%3E%3Cp%3Esomething%20she%20wasn't%20sure%20what%20to%20make%20of.%20When%20he%20finally%20decided%20to%3C/p%3E%3Cp%3Esettle%20down%20he%20of%20course%20took%20her%20favorite%20spot%20(on%20my%20stretched%20legs.)%3C/p%3E%3Cp%3EThat%20didn't%20deter%20Puss%20though;%20she%20eventually%20made%20her%20way%20to%20my%20feet%3C/p%3E%3Cp%3Eso%20that%20she%20could%20stretch%20from%20the%20other%20end.%20he%20he%20At%20some%20point%20their%3C/p%3E%3Cp%3Epaws%20were%20nearly%20touching;%20it%20was%20such%20a%20sweet%20moment!%3C/p%3E%3Cp%3ETime%20to%20Continue%20Our%20Journey%3C/p%3E%3Cp%3EIn%3C/p%3E%3Cp%3Ethe%3C/p%3E%3Cp%3Eend%20we%20stayed%20parked%20on%20Matt%20and%20Dawnen's%20lawn%20for%204%20weeks%20or%20so.%3C/p%3E%3Cp%3EWow!%20I%20know%20it%20sounds%20like%20a%20long%20time,%20but%20it%20flew%20by%20so%20very%20quickly!%3C/p%3E%3Cp%3ESince%20we%20lived%20in%20our%20respective%20trailers%20it%20was%20as%20though%20we%20were%3C/p%3E%3Cp%3Eneighbors%20for%20these%20few%20weeks.%20What%20a%20blessing%20to%20get%20a%20chance%3C/p%3E%3Cp%3Eto%20be%20part%20of%20their%20lives%20for%20a%20short%20while%20and%20partake%20in%20the%20abundance%3C/p%3E%3Cp%3Eof%3C/p%3E%3Cp%3Etheir%20garden%20and%20Matt's%20vast%20knowledge!%20It%20was%20an%20opportunity%20for%20us%20to%20expand%3C/p%3E%3Cp%3Eour%20horizons%20on%20so%20many%20levels!%3C/p%3E%3Cp%3EOne%20last%20photo%20before%20we%20go...%3C/p%3E%3Cp%3EUntil%20next%20time,%20Matt%20Man!%3C/p%3E%3Cp%3EUtah%20here%20we%20come!%3C/p%3E){kind=link}
