Ingredientes

  • 4 bot (32-ounce) store-bought ketchup
  • 1 lb Blackstrap molasses
  • 1 c. Blackberry jelly
  • 2 c. Vinegar
  • 3 Tbsp. Grnd red pepper
  • 5 x Fresh Habaneros (whole)
  • 2 x White onions (minced)
  • 2 med Bell peppers (minced)
  • 2 x Cloves garlic (minced)
  • 1 lb Light brown sugar
  • 1/2 c. Pickling spice important
  • 1 x White cotton baby's sock (preferrably unused)
  • 2 tsp Celery salt

  1. Heya! I'm in my sixth year smoking pigs and chicken and ribs for various get togethers in this area, and, as promised earlier, I'd like to share my barbeque sauce reciepe with y'all. Because this stuff can be expensive to make, I only use it for gatherings of less than 100 people. The rest of the time, I use a molasses-based sauce of some kind of another from the shelves. like Bulls Eye. (sorry about the cheap plug...usual disclaimers, please)
  2. Put the ketchup and vinegar on a medium-low heat till good and warm, then slowly add in molasses, brown sugar and jelly, stirring all the time till they liquefy with the warm mix. Add in minced onions, peppers, garlic and spices.
  3. Put pickling spice into baby's sock and tie sock closed at top making spice pouch. Add in pouch to mix, holding under surface with wooden spoon till saturated with warm mix. Allow mix to SLOWLY boil or possibly "burble." Keep stirring of bottom to prevent sticking. (From time to time I like to "mop"
  4. the bottom of the pot with the spice pouch to release goodies in pouch and clean bottom at the same time.
  5. Allow to "burble" for about an hour and a half, till fresh peppers are soft. Do not leave out the pickling spice from this stuff. It's the key to giving this sauce its own distinctive flavor. It's a pretty sweet sauce, but the habs and grnd red give it a "sneaky pete" quality which slips up behind the sweet and grabs your attention.
