Single-serving microwave cake recipes are perfect for such times. However, most of them never worked for me. Unless I ate them scalding hot and burnt my mouth in the process. Once cool, they almost always turned out dry and hard.

Finally I tried out a recipe for microwave flourless cake. That was better than the ones with flour. But it was still a little more pudding-like and a little less cake-like. Until I added some Nutella to the batter :) That was perfect. Even after an hour, when the cake was cool, it was moist and cakey...

Some days later, I also experimented using peanut butter instead of nutella and it resulted in a wonderful chocolate peanut flavoured cake.

Its very easy to make and takes just about a minute to cook.

Just mix all the ingredients in a cup

Microwave on high power (Mine goes upto 900W) for exactly 1 minute. And take it out of the microwave.

Wait for it to cool and enjoy!

1-MINUTE MICROWAVE FLOURLESS CHOCOLATE CAKE

Mix all the wet ingredients in a big cup and beat well.

Add the dry ingredients and mix well.

Microwave at high power (900W) for 1 minute. The cake will rise and double in size and the top sides might be slightly wet for a few seconds when you take it out of the microwave.

Cool and enjoy

This can be served straight out of the cup or even unmoulded onto a plate. Will be excellent with fruits and vanilla ice-cream.

This is a rich, dark moist cake. My older son and I shared one though he didnt really want to share :P

The best thing about this cake is that it is a quick-fix solution for a chocolate cake craving and also that there is no danger of over-eating and messing up your diet esp if you are on a diet (like me) :)
