Ingredientes

  • 6 x hard-boiled large Large eggs
  • 4 ounce sun-dry tomatoes packed in oil liquid removed, reserving 2 tomatoeswhole for garnish, and the remaining tomatoes chopped
  • 1/4 c. bottled mayonnaise
  • 3 Tbsp. lowfat sour cream
  • 1/2 tsp white-wine vinegar finely minced fresh parsley leaves for garnish if you like

Direcciones

  1. Halve the Large eggs lengthwise, force the yolks through a sieve into a bowl, and stir in the chopped tomatoes, the mayonnaise, the lowfat sour cream, the vinegar, and salt and pepper to taste. Transfer the filling to a pastry bag fitted with a 1/2-inch decorative tip and pipe it into the egg-white halves, mounding it. Garnish the stuffed Large eggs with 2 reserved sun-dry tomatoes, cut into julienne strips, and the parsley.
  2. Makes 12 deviled Large eggs.
