.%20Amongst%20them,%20Dhokla%20is%20one%20of%20our%20favorite%20as%20it%20is%20steamed%20and%20simple.%20Though%20I%20have%20seen%20it%20served%20as%20snack%20in%20restaurants%20and%20potlucks,%20I%20also%20serve%20it%20as%20a%20breakfast%20or%20as%20a%20light%20dinner%20along%20with%20some%20salad%20or%20soup.%20Most%20people%20make%20it%20from%20store%20bought%20mixes,%20while%20a%20few%20do%20it%20from%20besan%20(channa%20dal%20flour).%20Since%20I%20prefer%20to%20have%20my%20grains%20and%20pulses%20soaked%20and%20activated%20before%20I%20use%20them,%20I%20wanted%20to%20try%20and%20make%20it%20completely%20from%20scratch.%20I%20have%20been%20trying%20this%20for%20a%20while%20and%20I%20am%20very%20happy%20with%20this%20recipe.%20Most%20dhokla%20recipes%20call%20for%20Eno%20fruit%20salt%20which%20is%20an%20over%20the%20counter%20antacid%20used%20in%20India%20and%20other%20countries.%20I%20did%20not%20want%20to%20worry%20about%20finding%20the%20hidden%20ingredients%20in%20Eno%20(especially%20because%20I%20do%20not%20really%20trust%20a%20pharma%20giant%20like%20GlaxoSmithKline).%20%20So,%20I%20am%20just%20using%20baking%20soda%20and%20citric%20acid%20which%20are%20the%20basic%20ingredients%20in%20eno%20anyway.%20Btw,%20this%20is%20one%20dish%20that%20is%20as%20easy%20from%20scratch%20as%20making%20it%20from%20a%20mix,%20as%20always%20you%20just%20need%20a%20little%20bit%20of%20planning.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EDrain%20the%20dal%20and%20the%20rice,%20grind%20with%20water%20and%20yogurt.%20Add%20salt%20and%20turmeric%20powder%20and%20keep%20aside%20for%208%20hours%20or%20overnight%20for%20fermenting.%20(I%20added%20a%20tablespoon%20of%20idli%20batter%20as%20a%20starter%20which%20is%20my%20foolproof%20method%20to%20ferment%20batters%20in%20winter)%3C/p%3E%3Cp%3EWhen%20you%20are%20ready%20to%20make%20dhokla,%20add%20minced%20green%20chilly%20and%20ginger%20to%20the%20batter%20and%20mix%20well.%3C/p%3E%3Cp%3EBring%20water%20to%20a%20boil%20in%20your%20steamer%20and%20grease%20a%20dhokla%20plate*%20with%20a%20pat%20of%20coconut%20oil.%3C/p%3E%3Cp%3EJust%20before%20you%20pour%20the%20batter%20for%20steaming%20mix%20baking%20soda,%20citric%20acid%20and%20oil%20and%20add%20to%20the%20batter.%20If%20you%20are%20making%20dhokla%20in%20more%20than%20one%20batches,%20divide%20the%20baking%20soda%20mix%20accordingly%20and%20add%20just%20before%20you%20steam.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20prepared%20plate%20(fill%20about%201/2%20inch%20thickness)%20steam%20for%2012-15%20minutes%20or%20till%20a%20knife%20test%20at%20the%20center%20comes%20out%20clean.%3C/p%3E%3Cp%3ELet%20it%20cool%20down%20in%20the%20plate%20itself%20before%20you%20garnish.%3C/p%3E%3Cp%3EFor%20garnish:%20Heat%20oil%20and%20add%20mustard%20seeds.%20When%20they%20pop,%20add%20green%20chillies%20and%20saute%20till%20slightly%20roasted.%20Garnish%20over%20the%20dhokla.%20Also%20add%20chopped%20coriander%20leaves%20and%20lemon%20juice.%3C/p%3E%3Cp%3ECut%20the%20garnished%20dhokla%20into%20desired%20size%20and%20shape.%3C/p%3E%3Cp%3EServe%20just%20as%20is%20or%20with%20a%20coconut%20mint%20chutney.%3C/p%3E%3Cp%3EServes%203%20to%204.%20Enjoy!!%3C/p%3E%3Cp%3E*Note:%20Dhokla%20plate%20can%20be%20any%20plate%20(preferably%20stainless%20steel)%20which%20can%20be%20used%20for%20steaming.%20You%20can%20also%20use%20a%20cake%20tin%20or%20you%20can%20get%20the%20whole%20dhokla%20steamer%20set%20from%20any%20Indian%20grocery%20store.%3C/p%3E){kind=link}
