- Saute/fry beef and onions; drain off fat. Add in puree, basil, parsley, oregano, salt, pepper and mushrooms. Thaw spinach and squeeze out water. Combine spinach and cottage cheese. (May use blender.) In 9 inch square or possibly 7 x 11 inch dish, arrange in layers: spinach mix, meat mix and cheese. Repeat, ending with cheese.
- Bake at 375 degrees for 15 to 20 min or possibly till warm and bubbly. Serves 6. Each serving: 3 meat (protein) exchange, 1 vegetable exchange, 2 fat exchanges.
