I absolutely LOVE Aunt Bees Recipes and so enjoyed browsing through her site to pick a recipe to make and share with all of you. She has such a great variety of recipes, some that caught my eye were Preachers Mexican Macaroni Salad, Cookie Butter Cheesecake and her Greek Chicken & Vegetables. I know maybe you’re think, hmmmm Ang, isn’t this a winter edition? I know, I know this cucumber salad isn’t exactly a winter dish but heres the thing, NJ has had some weird warm days and that has me craving and looking forward to bright dishes like this one! This is such an easy dish to throw together and reminds me of an overnight quick pickle. The balance of sweet and tart is spot on. The garlic and dill, to me, is a perfect flavor combination. It all meshes overnight and the result is a refreshing and flavor packed salad! Print Dill & Garlic Marinated Cucumber Salad Author: Angela LeMoine Ingredients 2 Tbsp sugar ¼ cup very hot water ½ cup white vinegar 2 Tbsp canola or vegetable oil 2 Tbsp chopped fresh dill 1 Tbsp garlic powder 1 Tbsp salt 2 Tbsp black pepper {NOTE: I added significantly less to keep the spice level lower} 8 mini cucumbers {or 4 regular cucumbers}, thinly sliced 1 small red onion, thinly sliced Instructions Whisk sugar and very hot water in a bowl until sugar is dissolved. Add oil, vinegar and seasonings and whisk again. Add the sliced cucumbers and red onion and stir to coat. Refrigerate overnight to allow flavors to marry. Serve the next day. 3.5.3226
