Dilled Shrimp And Feta Cheese Salad

Ingredientes

  • 1 pound lg. shrimp
  • 3 green onions, including tops
  • 1/2 med.-size cucumber
  • 1 (4 ounce) jar pimento
  • 2 T snipped fresh dill or possibly chopped parsley
  • 1/4 c. rinsed and crumbled feta cheese (1 ounce)
  • 2 T lemon juice
  • 2 T extra virgin olive oil
  • 1 T white wine vinegar
  • 1 teaspoon Dijon-style mustard or possibly spicy brown mustard
  • 1 clove garlic, chopped
  • 1/2 teaspoon black pepper

Direcciones

  1. Shell and devein shrimp. Slice onions thin. Peel, seed, and chop cucumber. Drain pimentos and pat dry.Bring 1 qt unsalted water to boil. Add in shrimp and cook, stirring till just hard, about 2 min. Drain, rinse under cold running water, and drain again.
  2. Place shrimp in large bowl and add in green onions, cucumber, pimentos, dill, and cheese. In small bowl whisk together lemon juice, extra virgin olive oil, vinegar, mustard, garlic and pepper. Pour over the shrimp mix and toss gently to mix.
